Mayo Avocado Dip
This creamy dip pairs perfectly with SpudLove Jalapeno Thick-Cut Organic Potato Chips. Also great as a creamy spread for sandwiches!
- 1 large egg
- 1 tbsp Dijon mustard
- 1 tbsp Vinegar
- 1/4 tsp Salt
- 1 cup Neutral Flavored Oil
- 1 Avocado, diced
- In a blender or food processor, combine egg, mustard, vinegar and salt and blend until smooth.
- With the blender running, slowly stream in oil until combined.
- Add avocado and blend until smooth.
