Mayo Avocado Dip

This creamy dip pairs perfectly with SpudLove Jalapeno Thick-Cut Organic Potato Chips.  Also great as a creamy spread for sandwiches!


  • 1 large egg
  • 1 tbsp Dijon mustard
  • 1 tbsp Vinegar
  • 1/4 tsp Salt
  • 1 cup Neutral Flavored Oil
  • 1 Avocado, diced


  1. In a blender or food processor, combine egg, mustard, vinegar and salt and blend until smooth. 
  2. With the blender running, slowly stream in oil until combined. 
  3. Add avocado and blend until smooth.
